Cinnamon ~ Although not one of the "specialty honeys" I'd like to mention cinnamon has some wonderful anti-inflammatory, antimicrobial, antibacterial properties that make it wonderful for so many reasons! Many use raw honey and cinnamon together for arthritis, common cold, digestive issues (food poisoning) and something else that I'm sure I'll remember once this is published!
The taste is creamy and since I use 2 different Penzey's Spice Cinnamon, it compliments and blends with the sweetness of the honey quite nicely.
Allergy Honey~ My creamed allergy honey is made by adding Nettle (natural antihistamines.) creating a mint green look with a somewhat textured feel. It has an earthy taste, much like an oolong or green tea. As I'm not partial to either type of tea, I add a bit of cayenne pepper to mine and it becomes a warming spoonful of healthy supplements to boost the sinus system. Rose Petal Creamed Honey~

Do you, or someone you know, love to eat the honeycomb? Well this is a delightful, fun alternative that's just as healthy, if not more so! Creamed honey with edible rose petals is a sweet gift to give for for an anniversary, birthday or Mother's Day! Rose Petal benefits range from mood enhancer, aids with internal asthma, digestive issues, high blood pressure, bronchitis, slow circulation, diarrhea mild sedative and anti-depressant. Has lovely rose flavor which adds a different dimension to the sweetness of the original creamed honey taste shinning through. WONDERFUL and is at times, when I'm feeling especially feminine and genteel, my favorite creamed honey. The "idea" of it is certainly as unique as the taste and just lovely! Organic Lemon Zest ~ Oh bliss! This one, and the cinnamon, I plan to have on hand at all times!! This past Christmas, my mother-in-law shared the virtues of Lemon Zest (the outer/inner peel of the lemon) with me. The peel, as it seems with most fruit, contains much, if not more, of the nutrients and vitamins than the actual fruit! And the taste is divine...if you like lemon, that is. Blackberry Sage~ Subtle and smooth! One of my all time favorites! Who hasn't heard about the benefits of berries! While, sage is known as "the mind cleanser" and is such a great help with focusing thoughts while boosting a gloomy mood! This fun combination of taste sensations will delight the true culinary spirit in you or someone you know! Takes time to set up, so check with me to see if I have some on hand...otherwise, you'll want to order this ahead of time as the flavors take time to be absorbed by the honey! Lavender~ A lovely combination of lavender and raw honey! A true sensory indulgence of flavor and smell! Lavender is known for relaxation and stress relief. I also enjoy this as a breath freshener. The antibacterial properties of the raw honey help keep halitosis at bay while adding the delightful scent of lavender. I can leave the lavender in the honey or take it out as you wish. I'll mention the majority of lavender floats to the top during processing anyway; therefore, leaving it in tends to help keep the lovely scent alive in the set honey!
Warming Orange Spice ~ Orange zest, cinnamon, cloves and CAYENNE! This is a fun one, carefully blended with the warmth of cayenne finishing this interesting play of flavor! By itself or a compliment to certain dishes, this honey is a definite conversations starter and crowd pleaser!
Future adventures:
I'll also be playing with some basic herbs such as rosemary and mint in the future. I used to make a rosemary lemonade...I maybe doing the same with my creamed honey! I will keep you informed!
