*I never make these on the same day as other honeys for both practical reasons and for the health and safety of those with peanut allergies. (The chocolate honey must set up first THEN the Peanut Butter is mixed into a different jar.)
I get 2 different specialty sugar-free chocolate bars from our local health stores, along with carob chips. So, depending on your health needs, I can make this lovely treat Gluten-free, though with a $2 surcharge.
{The chocolate I use for Gluten-free is an award winning, European, sugar-free bar sweetened with 2 different kinds of natural sweeteners from plants (not stevia) and therefore it is quite costly! I currently have both kinds available.}

EXTRA INFORMATION that might be helpful/interesting to know in purchasing my honeys:
I don't heat my honey!
I don't use extracts and flavorings! (Blackberry Sage is a technical exceptions as it comes from an organic tea with natural flavorings)
To 'soften', simply scrape your spoon or butter knife over the top of the honey to get that creamy smooth goodness! If you go into the jar daily (no double dipping!), it'll naturally soften down, as you go, to more of a creamy peanut butter texture within a few days of "disturbing" the crystallization.
Some of the specialty honeys, like Lemon, Lavender, and Warming Orange Spice, resist this hardening due to the all natural ingredients!"
Shelf Life:
The Lemon and Orange Zest ones have a limited shelf life of about 5 months (my research on sugar preserved zest says 6 months, but I also throw away milk the day before the expiration date is up!
The other honeys will be good for years if taken care of properly: no double dipping, tightly closed (I used to say take off the "seal" I place under the jelly lid...but found it makes it hard to get the lid off if you get honey on the top lip...so I just keep mine on) And keep at stable room temp. (I prefer under my counter cabinets, near the floor, rather than up in a cabinet as heat rises. But friends have said it's fine up top too!)
Excluding the zests, the spices I use are from a quality spice store called Penzey's Spices. They guarantee their spices for 2 years...so even though the honey will be good for longer than that...I'd have to put the other honeys' shelf life at 2 years.

**Please be responsible for your health and research Nettle, Cinnamon and the other supplements to see if there are any contraindications for any medications you may be taking or health issues you currently have. Also, if you are pregnant or have a baby less than 12 months old, do not use RAW honey! I also came across a "theory" on the Internet that if someone was very allergic to bee venom they should not have honey. My beekeeper said that's not true...different systems make up the honey! That said, because this is just filtered honey...there may be tiny bee parts you can't see that add to the whole health of the honey (think John the Baptist eating locusts and honey) Bees die with venom in them...interesting conversation starter...but again...different systems in play in our bodies too! Food for thought!
